Why Cauliflower?
HiresHouse is choosing cauliflower over steamed white rice. Rice is often a staple item on the plate of average households and we were one of those households for many years. So why cauliflower? Oh, so many reasons! Low on the glycemic index which means it is also good for dieters, includes antioxidants so great for detox support, those same antioxidants lower our oxidative stress which means that it lowers our cancer risk. It is an excellent source of vitamin K so it is also an anti-flamatory. My favorite cauliflower rice replacement:
Make sure the cauliflower is dry, no water or condensation (if wet it will be mushy) break off the flowers and chop in Cuisinart or chopper until finely chopped. It should look a little like couscous.
Chop 4 green onions and 1 clove garlic and saute in approximately 3 tablespoons oil (olive or grape seed). Once you smell the aroma of the garlic, add the ground cauliflower.
Stir often, add a splash of water if too dry and cover. Cook about 15 minutes while stirring . . . once cooked (not mushy) stir in some chopped cilantro and lime from freshly squeezed lime.
Once you have made this, you will find that it is a quick, easy and refreshing replacement for rice.
